2 tbsp sugar
1 tsp baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup milk
1 large egg
2 tbsp unsalted butter, melted
½ tsp vanilla extract

¼ cup white chocolate chips
Zest of 1 orange
½ tsp ground cinnamon
METHOD:
1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Gently fold in the white chocolate chips, orange zest, and ground cinnamon.
5. Heat a non-stick fry pan over medium heat and lightly grease it with butter or cooking spray.
6. Pour ¼ cup of the pancake batter onto the fry pan for each pancake. Cook until bubbles form on the surface, then flip and cook until the pancakes are golden brown on both sides.
7. Repeat the process for the remaining batter.
Serve your Christmas pancakes with a dusting of powdered sugar, a dollop of whipped cream, fresh fruits or orange zest for garnish. You can also drizzle maple syrup over the top for added sweetness.
